The mouth, or oral cavity, and its extension, which stretches through the body to the anus, is not tabled....?

Quite frankly it's because the oral cavity all the style to the anus is "open" to the environment. While it does internally traverse the length of the belly, the GI tract is still considered to be external since it is open at both ends to the external environment.
Internal body cavity are those that are completely walled off from the external environment by in good health defined structures such as skin, mysentary, etc. In contrast the GI tract is specifically designed to periodically open to the external environment an allow food to enter and excess to leave.
